Golden Dal
The Staple Store’s version of the Ayurvedic dish Kitchari. Golden Dal is a spiced mung dal (split mung beans) soup used whenever the body needs to be brought back into balance - following childbirth, when you are unwell or recovering from illness. It is a good staple to always have on hand. A combination of organic mung dal, organic spices, organic coconut panella + Australian sea salt.
To Make
Add 2 tablespoons of organic ghee/butter/oil to a medium saucepan, melt + add the Golden Dal mix + toast the ingredients gently. Add 3 cups of water + bring to the boil. Then allow to simmer until tender (about 40 minutes).
To Eat
Alone as a soup or on top of a bed of steamed rice. Crusty bread, naan or papadams on the side is also a good idea.
To Serve
With condiments - Add a combination of the following fresh coriander, fresh lemon, fresh diced cucumber, toasted sesame seeds, tomato + onion salad.
Serves four people.

All of our products are handmade in small batches in Naarm (Melbourne), packaged in home-compostable materials. Because we use no preservatives and only wholefoods we recommend that you freeze or refrigerate our products on delivery.
When we know better we do better. About six years ago I went to a local bulk store to buy the ingredients to make kitchari. I had to use half a dozen small paper bags. That was where Kitchari Spice was born from, I recreated my recipe for the shop. For the last two drops we have sold the spice mix under the name Kitchari. When I was designing this drop it occurred to me that using the name + profiting off of a sacred Ayurvedic dish is cultural appropriation. We have since changed the name to Golden Dal (some of our print assets will still use the term Kitchari but will be run down) + have decided to give $2 from each packet sold to a small Indian charity for this drop. Ingredients
Organic mung dal, organic combination of Curcuma longa (turmeric), Zingiber officinale (ginger), Cuminum cyminum (cumin), Foeniculum vulgare (fennel), Cinnamomum verum (cinnamon), Brassica alba (mustard) and Trigonella foenum-graecum (fenugreek), organic coconut panella and Victorian Pink Lake salt.

By releasing small collections we can keep our stock fresh, minimise waste, observe the seasons and availability of the best produce. It will give us the space and time to learn and to create. Keeping us agile enough to change operations and procedures to make us better at what we do for you, our producers and the environment.
The aim is to eventually be online more often + it is something we will get closer to with each drop.
